Vegetable Soup - Groentesoep

A clear vegetable soup for a starter or snack

  • chopped vegetables (carrot, leek, celery etc)
  • vegetable stock or water and a stock cube
  • salt and pepper

Bring the stock to the boil then add the vegetables. Simmer for 15 minutes to produce a clear soup, no thickening required. Season to taste.

Paradoxically, authentic Dutch vegetable soup also contains small meat balls.

Tip: for a more substantial soup add dried vermicelli for the last few minutes. .
